RECIPE: Gluten Free Iced Bun (Dairy Free)

One of my favourite cakes when I visited the bakery as a child with my Grandma was quite simply the Iced Bun. An Iced Bun is such a simple treat but I have yet to find a Gluten Free Iced Bun. So, I’ve decided to make my own recipe! Of course I have made sure the recipe is also 100% Dairy Free too.

Iced Buns I guess are less often found in gluten free form as it is so much easier to create the right texture for a gluten free cake over that of gluten free bread, which is what an iced bun consists of. However, by using a Gluten Free White Bread Mix I have found a simple way to make the perfect Gluten Free Iced Bun. Now, you could use any gluten free bread mix that you like; or even if you have a recipe you like for gluten free bread, you could follow that (up to a point) with this recipe… But for me I used a Delicious Alchemy Gluten Free White Bread Mix that I recently purchased in the brand new Holland & Barrett Free From Store in Chester. 


The Gluten Free Iced Bun is something that just makes me smile, it brings back memories from the past. By slightly sweetening the standard white bread mixture, it alters the entire taste of the dough. The smell of them whilst baking & even more so once out the oven & iced is really something else. Needless to say our plate of buns went very quickly!


With Coeliac Awareness Week approaching, I thought baking these delicious gluten free iced buns would be a perfect treat to potentially sell at a gluten free cake sale, to promote awareness of Coeliac Disease, & the severity of the condition. The iced bun is a somewhat nostalgic cake, bringing back happy memories to all. The gluten free iced bun is bringing those nostalgic feelings from the past forward; with a tasty treat to show that, free from gluten is not free from taste!  


Right so lets get on with it… here is the recipe!


Gluten Free Iced Bun (Also Dairy Free)

Ingredients
  1. 1 Gluten Free White Bread Mix (I used Delicious Alchemy White Bread Mix which is 340g)
  2. 1 Small Egg
  3. 60g Caster Sugar
  4. 190ml Tepid Water (2 parts cold water to 1 part boiling - essentially it"s lukewarm water!)
  5. 225g Icing Sugar
  6. 2 - 3 tbsp Warm Water
  7. Sprinkles (optional)
Instructions
  1. Mix together the bread mix with 60g of caster sugar. (I use a KitchenAid Stand Mixer & I would recommend using some sort of stand mixer if you have got one, it really helps with dough or if not a food processor could work too)
  2. Whilst the mixer is still on, add the egg & 190ml of tepid water.
  3. Continue to mix until a soft dough is formed. (Don"t worry if it is quite sticky, trust me!)
  4. Knead for about 5-10 minutes on a gluten free floured surface until smooth.
  5. Place the dough in a lightly oiled bowl & cover with lightly oiled clingfilm.
  6. Place the bowl in a warm place for about an hour/until it has doubled in size.
  7. Once the dough has doubled take it out of the warm place and knock it back briefly by squashing it with your fists.
  8. Divide the dough into sausage shaped pieces (or whatever shape or size you wish them to be - with my dough I made 10 decent sized iced buns)
  9. Space them out on greased baking sheets, recover with clingfilm & place back in a warm place till they double in size once more.
  10. Heat oven to 200 degrees celsius (180 degrees celsius fan).
  11. Remove your clingfilm & cook the buns in the oven for 8-10 minutes, until they are slightly golden in places.
  12. Cool on a cooling wrack.
  13. To make your icing mixing 2-3 tbsp of warm water into your icing sugar, until the icing is shiny & thick enough to spread.
  14. Spread on each of the iced buns & sprinkle with lots of colourful sprinkles!
Notes
  1. Remember that if you are using a different gluten free bread mix instead of the Delicious Alchemy 340g packet, make sure you alter the measurements of the other ingredients accordingly. Please ask if you need help with the percentage maths!!

10 Awesome Things in my Healthy Nibbles Snack Box!

Healthy Nibbles delivered me my gluten free snack box a few days ago. Everything within the box was gluten free & vegan (therefore dairy free). I really wanted to share this with you guys as I feel it is something fresh & exciting beyond the once popular Graze Boxes. Click here or below to watch my Healthy Nibbles Haul!



1. Scrubbys – Vegetables Crisps with Character!

I am a massive fan of vegetable crisps, however I find most are incredibly high in fat & as a result have a negative effect on my IBS stomach & general digestion. Scrubbys contain 30% less fat than the average vegetable crisp & also contain my favourite vegetable flavour crisp – beetroot! Of course they are both gluten free & dairy free too!


2. Clearspring – Organic Tamari Roasted Sicilian Almonds

I have been a fan of Clearspring products for a few years now. I use their gluten free soy sauce on a regular basis & have always loved their Tamari Roasted Pumpkin Seeds. So I am really excited to try out these Almonds too. 


3. The Food Doctor – Roasted Bean Mix

Now I am sure a lot of you have seen The Food Doctor products in the big supermarkets or even might own a book by them. I haven’t really tried a lot of their products before so it was nice to receive this in my Healthy Nibbles Snack Box. A roasted bean mix, like this, is the perfect snack to have when you are on the go or when you are at work, unable to get out of the office.


4. Zendegii – Hazelnut Oat Bar

I have never heard of this brand before so again, it was pleasing to find another unknown product to me in my Healthy Nibbles box. One thing I really liked about this brand & the hazelnut oat bar, is that on the ingredients next to ‘Oats’ it says: ‘Scottish Coeliac Approved Oats’. It is encouraging to see that this brand have really thought about the importance of products being 100% suitable for a Coeliac.


5. Pip & Nut – Almond Butter

I love the name of this brand & I love the packaging too. I also am a massive fan of almond butter so this is a perfect item in my snack box. I am going away for a few days in May to Brighton & this sort of thing is perfect to have with me to put on my toast at breakfast time!


6. Chimpanzee – Dates & Chocolate Energy Bar

Again, this brand is completely new to me… & again I love the branding! Another energy bar here full of natural goodness & plenty of protein and fibre. All their bars are vegan but I have noticed that some do contain barley malt extract, so for those of you who cannot consume any gluten, beware!


7. Nakd – Toffee Treat

Now, we all know about Nakd. I used to eat a lot of Nakd bars a few years ago, when finding gluten free tasty snacks was very tricky. I bake so many of my own gluten free treats these days that I have realised I have less time for Nakd bars. However, when I saw these brand new Nakd Bar Toffee Treats in my Healthy Nibbles Snack Box I was really excited! Looking on the back of the packaging as I expected the toffee taste is coming from all natural sources which is great news. Dates are such a great way to create delicious toffee, I think I might be going back to eating more Nakd products now!


8. Rebel Kitchen – Chocolate Mylk

I love Chocolate Milk… & I love Chocolate Mylk. Rebel Kitchen do a wide range of different flavoured dairy free milks that are made mainly from coconut milk. I have tried the banana mylk before which was also delicious. & for those who are a fan, they also do green tea, coffee & chai!


9. Pana Chocolate – Eighty (Raw, Organic, Handmade)

I really love the look of the Pana Chocolate Brand. It is an Australian brand that makes completely raw chocolate. The chocolate comes packaged really nicely & they do a wide range of different flavours. I really like the sound of the sour cherry & vanilla chocolate… hope I get to try that one soon!


10. Planet Organic – Chia, Vanilla & Hemp Protein Bar

When I first discovered Planet Organic in London I wandered around looking at all the amazing products for ages. There was so much available for those who are gluten free & dairy free. Living in Manchester now, I haven’t been for a while; I didn’t even know they did their own branded products! This Raw Chia & Vanilla Bar is something completely different for me, but I am a huge fan of anything vanilla flavoured so I am definitely excited to give this a try!


It is really nice to have a fresh, new selection of foods to try that I might not have if I hadn’t received my Healthy Nibbles snack box. If you are regularly a little too busy to make your own gluten free snacks, then the gluten free healthy nibbles snack box might be something you’d like to consider getting. Fortunately, you don’t have to go into ordering a snack box clueless. They provide a menu on the site of what you would receive, & these change on a monthly basis! The menu feature is a great idea, for me I don’t always like all the products on offer so it allows me to choose months where I might not order one.


Healthy Nibbles also offer different sized boxes so if you don’t want too many items you don’t have to. On a month where I might be on the move a lot a snack box is the perfect accompaniment to my travelling. However, months where I know I will be based at home a lot I know full well that plenty of tasty gluten free baking will occur!

My Gluten Free Journey - What"s Yours?

Hi, my name is Becky. I am 24 years old and have been living for the past 8 months in the sunny climates of Manchester. I unfortunately live with a gluten intolerance & have done so since early 2010.

I know that gluten intolerances affect a huge amount of people across the world, as well as other food intolerances, allergies & more serious conditions such as Coeliac and Crohns Disease. So I thought I would share my story with you about how, firstly I acquired my problem, and secondly what it was like to have to contend with this, whilst I completed my university degree and beyond. What is it like to be gluten free?



My story actually starts right here in Manchester, where in 2009 I started a Law Degree. I moved 250 miles away from home and was really excited to start a new life in a vibrant, northern city. I lived with 7 other amazing flat mates, and was really enjoying the social side of university. However, the endless reading and hard work that a law degree brought was making me more and more unhappy.

I had worked really hard at college to get onto the course and I didn’t want to disappoint anyone, but deep down I knew Law wasn’t for me & I needed to quit.

Months went past of me stressing out, wondering what I would do if I stopped Law and what people would think of me. I started to feel more and more run down until April 2010, when I finally left Manchester University for good and returned home.

I had started to notice over the few months prior to leaving Manchester, that I was getting a huge amount of bloating, discomfort & pain whenever I ate certain foods. Initially I just ignored it, but it continued to become frustrating, and at times, quite embarrassing. I remember clearly a night of agony & incessant trapped wind, following a meal out at a local Italian restaurant.

Eventually I decided to visit my GP who sent me off for some blood tests, one of which was to see if I had coeliac disease. Fortunately it came back negative, but that didn’t solve the issues I was having. My doctor recommended I keep a food diary and try removing certain foods from my diet to see if it helped.


I very quickly came to realize that wheat, and soon after, all forms of gluten were the culprits of my discomfort. Whether it was bread, pasta, soy sauce or a custard cream biscuit, anything that contained gluten was making me really unwell. I decided to remove all gluten containing foods from my diet. This was a monstrous & unhappy task at first… who knew that so many foods contain gluten!


I returned to university the following year, new place & a new subject, which I enjoyed a lot more. However my digestive discomfort, upon ever mistakenly eating gluten, never went away. This made university more difficult for me. A night out with friends could no longer end with a kebab; and I was unable to partake in student associated dinners such as pizza & pot noodles! Back in 2010, ‘gluten free food’ was a lot less accessible, as was finding gluten free options in restaurants. I really struggled with this, as well as the sheer cost of gluten free living as a student.

However, as time has moved on more brands have started to creep out of the shadows and provide their own gluten free options; restaurants too have started jumping on the bandwagon. It is great to feel more understood by the wider food community and for the importance of allergens to be taken seriously.


Having to eat a gluten free diet made me a more adventurous cook throughout university, and that continued beyond graduation (I passed!). I started to try things that I wouldn’t have before, & began recreating dishes that I could no longer eat in their original gluten form.


For me, following a gluten free diet has become an insightful & positive experience. I realize this definitely isn’t the case for everyone. A gluten intolerance is incredibly frustrating a lot of the time & can cause a lot of problems. But, at the end of the day, all you can do is make the best out of a bad situation, & that’s exactly what I’ve done. Finding real gems in the rough, in the shape of gluten free products & restaurants is often exciting. Creating my own gluten free recipes that everyone loves is even more exciting.

I have learnt to help myself, and also help others combat the hold that a food intolerance can have on ones everyday life. This, alongside the steps forward the free from food industry have made in recent years, has made the whole experience so much more manageable.


And whilst I wouldn’t wish any food intolerance, disease or allergy on my worst enemy, I am glad that by having a gluten intolerance I have been able to understand and help others suffering from similar problems. Ultimately, whilst I can’t eat any old chocolate cake, I have learnt to make a pretty decent gluten free chocolate cake! & best of all? I am pretty damn happy.
