One of my favourite cakes when I visited the bakery as a child with my Grandma was quite simply the Iced Bun. An Iced Bun is such a simple treat but I have yet to find a Gluten Free Iced Bun. So, I’ve decided to make my own recipe! Of course I have made sure the recipe is also 100% Dairy Free too.
Iced Buns I guess are less often found in gluten free form as it is so much easier to create the right texture for a gluten free cake over that of gluten free bread, which is what an iced bun consists of. However, by using a Gluten Free White Bread Mix I have found a simple way to make the perfect Gluten Free Iced Bun. Now, you could use any gluten free bread mix that you like; or even if you have a recipe you like for gluten free bread, you could follow that (up to a point) with this recipe… But for me I used a Delicious Alchemy Gluten Free White Bread Mix that I recently purchased in the brand new Holland & Barrett Free From Store in Chester.
The Gluten Free Iced Bun is something that just makes me smile, it brings back memories from the past. By slightly sweetening the standard white bread mixture, it alters the entire taste of the dough. The smell of them whilst baking & even more so once out the oven & iced is really something else. Needless to say our plate of buns went very quickly!
With Coeliac Awareness Week approaching, I thought baking these delicious gluten free iced buns would be a perfect treat to potentially sell at a gluten free cake sale, to promote awareness of Coeliac Disease, & the severity of the condition. The iced bun is a somewhat nostalgic cake, bringing back happy memories to all. The gluten free iced bun is bringing those nostalgic feelings from the past forward; with a tasty treat to show that, free from gluten is not free from taste!
Right so lets get on with it… here is the recipe!
- 1 Gluten Free White Bread Mix (I used Delicious Alchemy White Bread Mix which is 340g)
- 1 Small Egg
- 60g Caster Sugar
- 190ml Tepid Water (2 parts cold water to 1 part boiling - essentially it"s lukewarm water!)
- 225g Icing Sugar
- 2 - 3 tbsp Warm Water
- Sprinkles (optional)
- Mix together the bread mix with 60g of caster sugar. (I use a KitchenAid Stand Mixer & I would recommend using some sort of stand mixer if you have got one, it really helps with dough or if not a food processor could work too)
- Whilst the mixer is still on, add the egg & 190ml of tepid water.
- Continue to mix until a soft dough is formed. (Don"t worry if it is quite sticky, trust me!)
- Knead for about 5-10 minutes on a gluten free floured surface until smooth.
- Place the dough in a lightly oiled bowl & cover with lightly oiled clingfilm.
- Place the bowl in a warm place for about an hour/until it has doubled in size.
- Once the dough has doubled take it out of the warm place and knock it back briefly by squashing it with your fists.
- Divide the dough into sausage shaped pieces (or whatever shape or size you wish them to be - with my dough I made 10 decent sized iced buns)
- Space them out on greased baking sheets, recover with clingfilm & place back in a warm place till they double in size once more.
- Heat oven to 200 degrees celsius (180 degrees celsius fan).
- Remove your clingfilm & cook the buns in the oven for 8-10 minutes, until they are slightly golden in places.
- Cool on a cooling wrack.
- To make your icing mixing 2-3 tbsp of warm water into your icing sugar, until the icing is shiny & thick enough to spread.
- Spread on each of the iced buns & sprinkle with lots of colourful sprinkles!
- Remember that if you are using a different gluten free bread mix instead of the Delicious Alchemy 340g packet, make sure you alter the measurements of the other ingredients accordingly. Please ask if you need help with the percentage maths!!
