RECIPE: Gluten Free Egg Custard Tarts

I have always been a massive Egg Custard Tart fan but haven’t eaten one in a very long time. That was until the other day when I made my own Gluten Free Egg Custard Tarts!

You might have recently seen that I put up a post, reviewing Silly Yak Gluten Free Pastry. Well, finding that pastry in my local Tesco was the very reason that I decided to make these Gluten Free Egg Custard Tarts. I am a poor pastry chef, & very rarely get the consistency right, especially now I have to make gluten free pastry! This Silly Yak pastry was so easy to use and I would highly recommend it if you find some in Tesco! (it’s in the chilled pastry section!)


This recipe of course would work with any gluten free pastry you can make or find yourself. It is incredibly simple too. Once the pastry is ready in the tins, the filling is only made up of a few store cupboard ingredients. Egg yolk, sugar & Milk (oh & a little nutmeg for the tops). I am embarrassed to say that before a couple of days ago I had never made my own custard, but this was very straightforward.

My only slight error when making my tarts was forgetting to glaze the pastry with egg before putting them in the oven. Of course this doesn’t matter but it makes the pastry look extra golden!


Anyway here is the recipe, enjoy!


Gluten Free Egg Custard Tarts
For this recipe I decided to try out the Silly Yak Gluten Free Pastry. You could make your own pastry, or use a different brand of Gluten Free Ready Made Pastry if you like :)

Ingredients
  1. 1 Pack of Silly Yak Gluten Free Pastry
  2. 7 Egg Yolks
  3. 700ml Full Fat Milk
  4. 90g of Caster Sugar (you could reduce this a little if you want to)
  5. Whole Nutmegs (for grating on top)
  6. Extra Gluten Free Flour for rolling out your pastry
Instructions
  1. Preheat your oven to 190C.
  2. Lightly grease some individual muffin/cake tins.
  3. Roll out your pastry on a lightly (gluten free) floured surface so that you can cut out around 12 discs. My cutter was 11cm across, a slightly smaller one wouldn"t matter but 11cm was ideal.
  4. Gently fit each of the discs into the moulds, make sure the pastry overlaps the top of the moulds a little.
  5. To make the egg custard filling beat together 7 egg yolks with the caster sugar until its creamy and slightly paler in colour.
  6. Warm the milk in a saucepan gently, but don"t let it boil.
  7. Pour the warm milk over the egg & sugar mix and stir thoroughly. There will likely be lots of bubbles on top.
  8. Place the mixture into a jug so it is easier to pour.
  9. Pour the custard into each of the pastry cases, you can fill them almost to the top if you like!
  10. Grate nutmeg over the top of each tart.
  11. You might also like to glaze the pastry with a little egg yolk to make it golden!
  12. Carefully place the tarts in the oven for about 25 minutes. Make sure you don"t overcook them, they will cook in their tins a little more once they are taken out!
  13. Leave the egg custard tarts to cool for about 30 minutes before removing them from the tin. (Very gently ease them out!)
  14. Enjoy! I guarantee they will taste amazing :)
Notes
  1. A gluten free egg custard tart can easily be made dairy free too by either creating your own pastry without dairy... or by using a vegan & gluten free ready made pastry. I can recommend Voakes Free From who make Gluten Free & Vegan Pastry.
  2. For the filling you will just need to use a high fat dairy free alternative to cows milk.

The Gluten Free Egg Custard Tarts emerged looking beautiful. There is nothing better than a homemade tart & I am really proud of my first attempt at making them. The egg custard filling had the exact consistency I was looking for. The grated nutmeg provided the perfect flavour to the custard too.

The Egg Custard Tart is something traditional that I used to enjoy getting from a local bakery & enjoying with the rest of the family. I am so glad that I can do that again now with this Gluten Free Egg Custard recipe. & trust me, even those who can eat gluten will love the gluten free pastry from Silly Yak. (or any other gluten free pastry you make or buy!)

REVIEW: Sukrin Gluten Free & Yeast Free Bread Mix

We would probably all bake our own bread if it was quick, easy & delicious. Well here is one of my favourite gluten free & yeast free bread mixes that doesn’t need a bread maker! The Sukrin Sunflower & Pumpkin Seed Bread Mix!

I tried this bread mix from Sukrin for the first time back in 2013. Whilst I was interning in London, somebody I worked with recommended I try it as it. I then tried it at The Allergy & Free From Show 2013 and loved it. I’ve baked it a few times since; it really is a delicious change from my regular gluten free white bread.


Not only is it gluten free, it is also egg free, sugar free, yeast free & soya free. I know that many folk have issues with yeast in bread mixes so this is a delicious solution. It is also a really high fibre bread with each slice on average containing 6.4g of fibre. Oh & for those of you who care about carbs.. there is only 1 carb per slice!

I enjoy the taste of a bread that is full of seeds, it just seems to have that little added extra. It makes the bread incredibly enjoyable just on its own with a little butter.


Another great thing about this bread mix is that it is ridiculously simple to use. No bread maker required… this was perfect for me, because I am not currently in my own kitchen with my Zero Gluten Baker. All I needed to make this bread in addition to the bread mix was an oven & 250ml of water… they even provide the tin that you cook the bread in! It’s as simple as shouting GLUTEN FREE! Place the bread mix into a bowl, mix in the water. Pour into the tin provided, and cook for 1 hour 20 minutes until the crust is golden.

The bread is by no means a full size loaf that you would use for a full sized sandwich. You could, but personally for me it is my absolute favourite to have alongside some boiled eggs as soldiers or with some soup. I really doubt you will find anything nicer. Oh & it is also amazing with some lovely cheddar on top of it, you’ve got to try it!

RECIPE - Gluten Free Banana Bread - Dairy Free & Refined Sugar Free

My banana bread recipe is one of those amazing things that tastes amazing & you can eat as much as you want! My recipe is gluten free, dairy free, refined sugar free & essentially fat free too! It’s perfect with a cuppa, as part of dessert or even to take out with you as a snack. This gluten free banana bread is so simple – you’re going to love it!

So I love baking. I’d bake every day if I could. Similarly to so many folk I aspire to have my own little café one day… I can keep dreaming right?!

I have definitely enjoyed baking even more in the past 5 years since gluten has been off the menu for me and dairy is a no for Mark.


Myself and Mark also have a few other little issues to contend with. As you know, we both suffer with the ‘wonderful’ problem of IBS. For me I really struggle with too much sugar in foods, whether that is natural sugars from fruit or more refined sugars. 


Instead, a favourite of ours is a tasty, gluten free banana bread recipe I recently came up with. I have seen many Banana Bread recipes over time and many of them seem fairly healthy, but I wanted to go one step further and make it entirely gluten free, dairy free and safe for our stomachs! That meant no additional sugar – the only sugar coming from the bananas and a very small amount of apple sauce. Also the recipe contains no signs of any butter, margarine or oil. It seemed the perfect cake for us.

It is a very versatile recipe too. We like cinnamon in ours but you don’t have to. You could add nuts if you wanted to as well. For us we keep it simple. It tastes great cold with a comforting cuppa tea or, I have to say, I like to warm it up in the microwave with a little custard. This healthy gluten free banana bread loaf keeps moist and fresh for plenty of time, especially when, I guarantee, it will be eaten incredibly quickly. The combination of tasty and healthy makes you eat slice after slice… after slice!


I guarantee this healthy gluten free banana bread recipe will go down well with those who are gluten free, dairy free & everyone else. It is a delicious, gluten free banana bread that we can’t live without on a rainy, cold Manchester day. I hope you get the chance to give this a go too.

Ingredients
  1. 4 Ripe Large Bananas
  2. 4 Tbsp of Apple Sauce (You might choose to add less if you wish)
  3. 200g Gluten Free Plain Flour
  4. 1 ¼ Tsps of Gluten Free Baking Powder
  5. ½ Tsp of Bicarbonate of Soda
  6. Tsp of Cinnamon (You can add more or less of this, to taste)
  7. 2 Egg Whites (I used Two Chicks Egg Liquid Egg White - 4 Tbsp does the job!)
Instructions
  1. Preheat your oven to 180 C/ 160 Fan.
  2. Prepare a loaf tin (grease it or use baking parchment).
  3. In a large bowl, mix together gluten free flour, baking powder, bicarbonate of soda and cinnamon.
  4. Mash 4 ripe bananas. There is no need to make the bananas completely smooth, small chunks of banana give the bread a great texture.
  5. Add the mashed bananas, egg whites and apple sauce to the dry mixture and stir thoroughly, just until combined.
  6. Bake in the preheated oven for 50 to 55 minutes. Check the loaf is cooked by inserting a skewer into the centre of the loaf and making sure it comes out clean.
  7. Turn out onto a cooling rack and allow to cool before eating. (It takes a while but it’s worth the wait!)
  8. Enjoy!

RECIPE: Gluten Free & Dairy Free Rice Krispie Cakes

This recipe has been requested many times & it is so, so simple. Rice Krispie Cakes are the perfect treat for kids & big kids! These are both Gluten Free & Dairy Free too.

 Who was a fan of Rice Krispie Cakes as a child? I often made chocolate rice krispie cakes for school cake sales, they were definitely my favourite! As I got older I started taking rice krispie squares from Kelloggs in my lunchbox. However, up until fairly recently, I don’t think I’ve enjoyed a rice krispie cake in years. If they were simple enough to make when I was really little, then I’m sure I can make some at age 24!

You can of course make cornflake cakes instead if you prefer… I used to love them as well! Just make sure whatever cereal you use, it is gluten free. It is easy to think that regular cornflakes and rice krispies are gluten free when they are not. They contain Barley Malt Extract often, so make sure you ensure yours are gluten free.


Optional extras… well not optional in my opinion are the extra mini marshmallows on top. They provide a lovely soft texture against the crispy cakes. Also, dairy free chocolate drizzled all over the tops of the rice krispie cakes is the perfect finishing touch. Any dairy free chocolate will do, but my absolute favourite is Cocoa Libre. I love all of their products sooo much!

Ingredients
  1. 50g Dairy Free Spread
  2. 1 tsp Vanilla Extract
  3. 200g Marshmallows
  4. 100g Gluten Free Rice Krispies
  5. Extra Mini Marshmallows for topping
  6. Melted Dairy Free Chocolate for topping (I used Cocoa Libre Dairy Free Chocolate)
Instructions
  1. Grease a baking tin thoroughly with oil or dairy free spread.
  2. Melt the dairy free spread over a low heat.
  3. Once melted add the vanilla extract & the 200g of marshmallows.
  4. Melt the marshmallows down, continue to do this at a low heat, stirring frequently.
  5. Once fully melted, remove from heat & stir in your gluten free rice krispies, making sure they are fully coated.
  6. Pour your mixture into your prepared tin & spread it out evenly (it will be really sticky so try your best!)
  7. Sprinkle your extra mini marshmallows over the top of it... you might like to press some of them in... they should stick really well though.
  8. Scatter your melted dairy free chocolate over the top - I do this in quite a messy way by getting spoonfuls of the hot melted chocolate and splashing them down over the rice krispies... if that makes sense!
  9. I like to then place my tin in the freezer to chill the mix for about an hour. But you can easily just chill it in the fridge for a couple of hours so that it sets.
  10. Cut into pieces & enjoy! I often keep the rest of them in the fridge before eating, I like them nice and cold!

So, as I mentioned these gluten free rice krispie cakes are certainly not just for the kids… Mark has been nagging me to make them for ages and he is certainly not a child anymore!! They are perfect for everyone to enjoy, what we love about them is that they are really simple to make AND they are really light to eat. Often cakes can be really filling, these are anything but! Of course, this can be dangerous as we end up eating far too many at once!!
